| NEW! Tilman Ice "Barrel Aged" Pinot
Noir 2007 Silver Medal
Winner
Certified Organic Pinot Noir grapes were picked and made
into Icewine in late January 2008. Slow and careful
fermentation over a period of twelve months gave this wine
rich and complex flavours, as well as an exceptional balance
between sweetness, body and acidity. This wine was
additionally aged for a year in premium French oak barrels to
give it an added layer of intensity. Caramel, honey,
sandalwood and Asian spice notes dominate in the aromas, but
many other nuances wait to be discovered. The crisp acidity
refreshes the palate, and electrifies the nutty and spicy
flavours.
Match with soft cheeses, Asian cooking, and treefruit-based
desserts.
Sugar at pressing: 50.0%. Residual sugar: 15%. Alcohol:
12.3%

Winner
Certified Organic Pinot Noir grapes were picked and made
into Icewine in late January 2008. Slow and careful
fermentation over a period of twelve months gave this wine
rich and complex flavours, as well as an exceptional balance
between sweetness, body and acidity. This wine was infused
with organic lavender grown on our farm. This brings an exotic
floral note to the already intriguing layers present in the
wine. The lavender combines with honey, caramel and Asian
spice notes in the aromas, creating a truly unique tasting
experience.
Enjoy on its own or match with soft cheeses, spicy seafood
and Southeast Asian cuisine.
